Veg-Peanut Stir-Fry

Today was a busy one, and it started early with a 5:30am workout:  1 hour treadmill walking incline intervals + core work.  I watched the Olympics (pairs figure skating) on the DVR and the hour flew by! 

I knew I would not have time for a mid-morning snack so I ate a good, hearty breakfast to get me thru the morning.

Egg white with broccoli and mushrooms, mini bagel with Chocolate Better ‘N PB, and a mango.

I stay full longer when I eat eggs, they just don’t always sound good.  I need to work on eating eggs for breakfast more often.

When I finally got around to eating lunch, I pretty much raided the fridge and this is what I found…

Cold Domino’s!  I hate to say this, but I think it may have tasted better cold, than it did hot and fresh last night :\  Maybe anything would have tasted phenomenal because I was so hungry?

Afternoon snack of carrots and hommus, and a few Mike’s Yogurt chips.

I wasn’t overly hungry for dinner, but knew I should eat something to avoid an ice cream attack at 8pm healthy.  Considering I bought A TON of vegetables, I need to eat them :)  I have a tendency to buy too much fresh food and not eat it before it goes bad. 

I decided to make a veggie stir-fry, with peanut sauce, quinoa on the side and a half of leftover chicken breast (from the night I watched Food, Inc. and couldn’t bear to eat chicken, I’m over it now!).  The peanut sauce is actually out of a bottle, and had some serious spice to it.  Glad I didn’t add my own of any sort, besides the usual staples of garlic and ginger when sautéing veggies.

  • chicken
  • quinoa

Time to watch more Olympic skating coverage – Bob Costas’ dyed hair and all!  Looking forward to spending the better part of the day with my mom tomorrow!  Massages and lunch!!

I love pizza both hot and cold. It's been forever since I've had Domino's, though...this is making me crave it! Hummus and carrots are definitely one of my favorite snacks :)
