Hello all! I hope everyone had a lovely Monday, I did! My day started out with a big bowl of fiber.
Kashi GO LEAN + Cheerios + Granola + Vanilla Soy Milk
Definitely a filler-upper, though a tad bland.
I thought about going to the gym (it’s only a mile away), but decided not to bare the elements and do another treadmill interval workout at home.
Workout:
- 5 min warm up @ 4.0
- every 5 minutes I changed the speed or incline or both
- Total 4.0 miles, 420 calories, 50 minutes
- Upper body strength, shoulders, core, stretching
Post-workout snack included {unphotographed} two hard-boiled egg whites, a handful of blueberries and White Cran-Apple Green Tea
The snow just kept falling and falling, it was beautiful. {We ended up getting about 8 inches, but it was 35 degrees so I can only imagine a slushy mess out there right now, which is better than freezing and turning to ice}. I really wanted to go snow-shoeing, and knew if I waited around and got comfy I wouldn’t bundle up and go.
I like to snow-shoe at a local park near my house; there are hiking, cross-country skiing and mountain bike trails! ![]()
There are multiple maps like this. I find them hard to follow, but have learned the hard way, if you stay on the trail, you cannot get lost in the wilderness! Duh?!
I have no clue how far I walked, but I did burn 422 calories in 45 minutes, and was a sweaty mess when it was said a done. Apparently I wore too many layers for 35*. I tend to do that.

I worked up quite the appetite by the time I was done. Decided to ‘treat’ myself to Jimmy Johns! I LOVE Jimmy John’s cause it’s so fresh and made right in front of you. Plus, their pickles are to die for! I usually get the “Unwich” - sandwich in a lettuce wrap, but today I wanted some loaded carbs. I opted for the #12 Beach Club on 7-Grain Wheat Bread sans mayo.

Fresh baked turkey breast, provolone cheese, avocado spread, sliced cucumber, sprouts, lettuce, tomato, and mayo hot peppers! (It’s the real deal, and it ain’t even California.)
This is HALF!
I ended up eating the entire, whole sandwich, open-faced, over a 2-hour time period…I guess I wanted it to last forever :)
Relaxed and watched Monsters vs. Aliens this afternoon, super cute movie!!
Dinner was kind of a weird combo, delicious nonetheless.
Fresh Brussels Sprouts
Halved with butter, olive oil, salt, pepper, and garlic powder
Baked @ 400* for 30 minutes
Crispy and crunchy and full of flavor![]()
Along side, turkey kielbasa baked with onion and mandarin oranges, ketchup & brown sugar, all mixed together.
The recipe actually called for canned pineapple chunks, which I didn’t have, so that’s why I used “no sugar added” mandarin oranges. Perfectly sweet and sour.
I just made a pot of coffee for iced-coffee this week and am watching The Bachelor: Women Tell All!
Question of the Day: Who will Jake choose next week? Tenley or Vienna? For those who don’t watch this crazy show, did you do anything fun and exciting today, cook or eat something new?

pretty snow! I'm kind of over the snow though considering we've had soooo much in philly this winter. I love Jimmy John's and the beach club is my #1 favorite!
I've always wanted to try snowshoeing- it's a great workout and looks so fun! I love brussels, too :) Today I made pumpkin quinoa...not exactly new, but I love it! Have a great night :)
That looks amazing!! I'll have to try my brussel sprouts like that. I miss MI!! Where exactly are snowshoeing trails? I'm from Waterford so there are lots of parks around. I wonder if I can rent snowshoes???
I've heard he picks Vienna, which doesn't make me a very happy girl!
Tara - I actually live in Walled Lake, so among the lakes there are a lot of parks and golf courses. I have never looked into renting snowshoes. Let me know if you check into it!
First your food looks really good. Especially the brussell sprouts. I tried roasting them in the oven but they did not turn out as appetizing as yours.

Wow Julie!! Walled Lake is so close. My boyfriend actually lives in Commerce so that's even closer. Small world!! I'll def let you know if I hear anything about the snowshoes.
