SNOW = Turkey and Vegetable Chili

It’s finally snowing significantly here in Detroit!  Truthfully, I was a tiny bit jealous of all the Mid-Atlantic-ers over the weekend. smile_wink

An hour yoga sesh + 30 minutes on the arc trainer this AM was enough before breakfast.  Plus I wanted to run to the grocery store before the roads were covered. 

With up to 10” on the way, I figured why not make a big pot of chili?!  Of course, I couldn’t just make regular chili, I found a Curtis Stone - Biggest Loser recipe for Turkey and Vegetable Chili.  See photo above.

 

Turkey and Vegetable Chili

Serves 4-6

INGREDIENTS

1-1/2 tablespoons olive oil
1 large onion, medium diced
1 garlic clove, minced
1 small red chili, seeded and small diced 1/8 tsp cayenne, ground
1/2 teaspoon ground cumin
1 large carrot, peeled and small diced
1 large celery stalk, medium diced
1 small yellow bell pepper, seeded and medium dice
12 ounces 1% lean ground turkey
4 medium size ripe tomatoes, medium diced
8 oz cooked white or black beans
4 cups baby spinach
Freshly ground black pepper
1/4 cup plain fat free Greek style yogurt
Micro cilantro to garnish, (can substitute with chopped chives or chopped cilantro)

METHOD

  • Place a large saute pan over medium high heat, then drizzle with the oil.
  • Add the onion, garlic, and red chili cayenne and sauté for 2 minutes, or until tender.
  • Sprinkle the cumin over the onion mix and stir well, then add the carrot, celery, and bell pepper and cook for 5 minutes, stirring occasionally, or until the vegetables begin to get tender.
  • In a separate saute pan, brown the turkey in the remaining oil over medium high heat, then transfer to the vegetable mix.
  • Add the tomatoes and the beans and cook for a further 8 minutes, stirring occasionally, or until the tomatoes have broken down and most of the liquid has evaporated. **I added about 1-2 cups of chicken broth for some liquid**
  • Stir in the spinach and remove from the heat.
  • Season the chili to taste with freshly ground black pepper
  • Spoon the chili into serving dishes
  • Spoon a tablespoon of the yogurt onto each garnish with the micro cilantro and serve.

Rewind to yesterday afternoon and evening... 

My afternoon snack was an apple and PB, but no normal PB.  CHOCOLATE BETTER ‘N PB!  I don’t buy this too often so it was a special treat.  Holy yum.  I might just have to have it again today.

Dinner with the fam consisted of a big salad and pizza.  I must apologize up front that the Domino’s pizza experiment did not work out, but plan to try again soon.  There will also be a Domino’s gift card GIVEAWAY coming with that!

  • romaine
  • spinach
  • avocado
  • grape tomatoes
  • mango
  • blueberries
  • red onion
  • red bell pepper
  • goat cheese
  • green bell pepper

I’m happy to say I ate way more salad than pizza.  Mushroom, ham and onion.  Main Street Pizza (Plymouth, MI) is extraordinary!  I love the local, family owned places.

Hey girl I wanted to let you know that I don't buy anything on yoga download. I just do the 20 minute freebies. They are SOOOO good. I'd probably buy the longer ones if I had the time to do them. It's so relaxing :)
